This is one of my husband's go-to favourites!  Nothing nicer on a hot summer evening to have this flavourful pate with either toast points or a sliced baguette.  Green salad on the side and a crisp glass of white wine . . .  YUM! It does make a good amount (3 cups) so you might want to have friends over or make a gift of some of it :) CHICKEN LIVER PATE In a large skillet, melt 2 tsp of butter over medium heat and add 3 thinly sliced green onions.  Cook until limp. Add 1 pound of chicken livers and cook until browned. Stir in 1/2 cup of red wine and add in : 1/4 tsp kosher salt1/8 tsp thyme1/8 tsp fresh ground pepper Reduce the heat to a simmer for 3 minutes Add 2 TBSP of chopped parsley and then transfer to a food processor and pulse til smooth. First of all, if you don't love jello, you may not appreciate this either!   I love it.  I think it is fun as well as tasty.  It is also quite unexpected! You'll need 8 clear glass tea or coffee cups. In a large bowl, mix 2 envelopes of unflavoured gelatin with 1/2 cup of Kahlua.  Allow to sit for 10 minutes to soften. Then add 3 cups of HOT coffee, 1/4 cup of sugar and a pinch of salt and stir until the sugar is totally dissolved. Pour into the individual cups and chill until set. Serve with whipped creme on top (like a cappuccino!) I like to add a biscotti on the saucer just for that extra little bit of something something! I will admit to first trying this recipe out only because I didn't know what Ponzu Sauce was! Let me share with you:  "Ponzu (ポン酢?) is a citrus-based sauce commonly used in Japanese cuisine. It is tart, with a thin, watery consistency and a dark brown color"   or so says Wikipedia! This would be my go to sauce for sushi too.  My Basil plants are flourishing right now so what time to infuse my Ponzu ! CHILLED SHRIMP with BASIL PONZU SAUCE You'll want at least 1 pound of cooked and shelled medium shrimp, chilled and waiting. To make the Ponzu sauce combine in a small bowl: 1/4 cup of fresh basil, chopped up1 clove of fresh garlic2 TBSP of finely minced fresh ginger2 TBSP soy sauce2 TSBP of freshly squeezed lime juice - love this!2 TBSP of freshly squeezed orange juice2 TBSP of brown sugar...

I love cauliflower in all of its low carb goodness!  One of my fave ways of serving it can be found on my Pinterst page :  SPICY ROASTED WHOLE CAULIFLOWER   This is a similar recipe but with florets instead of whole and using your own fresh ground spices. Preheat your oven to 425 degrees and then grease a baking sheet with olive oil.  (can also be done on BBQ) Grind your spices until fine: 3 Cardamom pods2 dried red chillies or 1 fresh1 TBSP coriander seeds1 TSP cumin seeds1/2 TSP peppercorns Mix the spices with 1/4 cup of olive oil in a large bowl.  Add the florets from 1 head of cauliflower and 1 large red onion, thinly sliced.  Add additional oil if needed. Transfer the veggies to the baking sheet, spread evenly.   Roast til tender and onions are carmelized.  About 30 minutes.  Stir ...

Our local fresh strawberries are available and once I stopped stuffing my face with them like popcorn, I decided I needed to make something other than a fresh strawberry daiquiri.  Why, I don't know! I love Carrot Cake and thought the addition of fresh strawberries would be a fine idea so here you are: STRAWBERRY CARROT CAKE: 2.5 cups of flour (I used white)1.25 cups of brown sugar1 cup of shredded carrot.5 cup oil, vegetable or olive (I don't find it makes a difference).5 cup of plain yogurt  (I make my own now so it is always in the frig)1/3 cup of water.5 cup of chopped pecans or walnuts1 tsp of cinnamon1/2 tsp baking soda1/2 tsp salt2 eggs1 cup of chopped strawberries Strawberry Cream Cheese  Glaze - recipe to follow Preheat oven to 350 degrees.  Grease and flour a bundt cake pan. I must warn you that the secret is to use the freshest of spices.  If you must use a ready made curry powder, make sure it does not contain salt.   To make the greatest Curry Powder: 2/3 tsp turmeric1 1/3 tsp coriander seeds1 1/3 tsp cumin seeds2/3 tsp peppercorns2/3 tsp cardamom pods Combine all spices in a skillet and heat until fragrant - DO NOT BURN.  Transfer to spice grinder and grind til fine.  Store in air tight container   SOUP: 1 whole cauliflower, cut into pieces2 cups of chicken stock2/3 cup of Half and Half1 1/2 TBSP Olive OilSalt to taste1 1/2 TBSP of the above Curry Powder1 1/2 tsp grated fresh ginger2/3 tsp garlic powder or 1 fresh clove minced2/3 tsp onion powder1 1/3 TBSP cornstarch Steam the cut cauliflower until tender.  Drain and put back to pot. If you've not brined your meat and poultry before, you really don't know what you're missing - best trick I've learned in a long long time.  I've been brining my Christmas Turkey now for years and wouldn't have it any other way. Now, lets brine our pork loin chops or centre cut pork chops!! For at least one hour, submerge and soak your pork chops in a large pot or bowl or zip lock bag with: 3 quarts of water with 3/4 cup of Kosher salt and 6 TBSP sugar.  I like to make sure my salt and sugar are melted in at least 2 cups of warm water before I mix it all into the cool 3 quarts.    4 bone in chops, approx 3 pounds total, will do.  Place in fridge and remember to turn occasionally.   Meanwhile, you can make your Dry Rub: 1 TBSP fennel seeds1 TBSP ground cumin1 Tsp ground coriander1 Tsp gr...

I don't know about you but in our house, cold salad side dishes are on the menu everyday.  Something off the grill and something out of the fridge - YUM! I like to make something first thing in the morning and pop it into the fridge for lunch or dinner. 1 cup of uncooked orzo pasta1/4 cup of pitted greenn olives, sliced, chopped or left whole1 cup of diced or crumbled feta3 TBSP of chopped FRESH parsley3 TBSP of chopped FRESH dill1 chopped tomato1/4 cup olive oil, virgin preferably2 TBSP lemon juiceS & P to taste   Bring a large pot of salted water to a boil. I have to admit, I really enjoyed this soup but several of my family turned their nose up at it!  It might be wise to not tell them what it is until AFTER they've tasted it :)  Makes for a lovely lunch with a green side salad too.   This recipe calls for frozen strawberries but they're fresh and in season so use them if you've got them!!   2 cups strawberries3/4 cup light creme (10%)1 1/4 cups of milk, even 1% will do2 TBSP diced fresh jalapeno peppers with seeds removed1/2 cup of sugar (or Splenda will work too)1 pinch ground black pepper2 tsp Allspice1 tsp Balsamic venegarMint leaves to garnish Put everything except for mint leaves into blender.  Blend until smooth.  That's it!! I've made these in the oven in the winter and on the grill in the summer - both are fantastic sides with meat or poultry!                                                   Preheat oven to 350 degrees Butter a baking dish just large enough to hold the onions. Cut the unpeeled yellow or red onions in half lengthwise through the root and stem ends. Cut a thin slice off the rounded side of each half so that it will sit upright in the dish. Arrange the onion halves, cut side up in the prepared dish.  Season with salt and pepper and place a teaspoon of butter on each half. Cover and back 45 - 50 minutes or until onions give slightly when the edges are squeezed together between your fingers. I love a traditional Potato Salad but sometimes a girl just has to expand upon it . . .  especially when grilled steak is on the menu!! I wanted to provide you with the menu first to let you prepare one yourself for tonight.  Make sure you come back later to see the end result pictures!!!
