Canada celebrates Thanksgiving the 2nd Monday of each October.  This year was particularly special for us and we had such a lot to give thanks for!Emo's Eating Emporium was once again the gathering place and, even though we had 4 who couldn't make it, we had a very enjoyable meal and as per our norm, we were able to present a celebratory atmosphere: Even the napkins were folded in "Turkey" style, lolWe served two different turkey dishes:  Red Wine Braised Turkey legs (drumstick & thighs) plus aBacon Weave Turkey Porchetta (dry brined and wrapped around Fennel & fresh Sage).They both cooked to an incredible and flavourful moistness and were well received!My favourite dish of the night was the Southwestern Roasted Rainbow Carrots with Cilantro - YUM YUMThere were also Squashed Red Potatoe...

We went against the norm this year and did without Ham or Turkey for our Christmas Dinner.  Instead I opted for a large Beef Roulade stuffed with garlic, breadcrumbs, ham, raisins, walnuts and parmesan cheese -  OMG was it good!We served it with both buttered noodles and mashed potatoes and Caesar Salad and it was a surefire hit with all.   I wished now we could have it for New Year's Eve too it was THAT good.It almost didn't happen as I was quite ill for the past several days and couldn't stomach the thought or look of food.  My wonderful husband took it on with me talking him through it!We started with a beautiful flank steak from our local Kingston Farm Boy store where the fabulous butcher butterflied it for us so it was nice and thin and ready to be filled. The time is perfect to take a portion of my tomato harvest and create my much loved Gazpacho!!                                                     A nice assortment of all that was ripe this morning, yellow grape, cherry and a few beefsteak.A few spoonfuls of Red Wine Vinegar and a glop of olive oil over some stale bread and a cheese & jalapeno wrap that was going to be thrown out if not eaten.   All of that gets blended in the food processor.                                                              A cucumber, green onions and some peppers go into the processor and pulsed with some garlic.  Add some salt and pepper and into the fridge it goes to get icy cold!  Garnish and enjoy :)From the kitchen of Emo's Eating Emporium to yours - enjoy the bounty of a container garden!

I love a good Charcuterie Board and/or a tasty Cheese Board.  Nibblies are my go-to favourite when eating out or serving friends and family.  We had a family get-together last weekend and I knew it was going to be far too hot to be slaving over a hot oven or grill so, Voila . . . Canada Day is slowly creeping up on us - July 1st will be here before you know it!Coinciding with its 40th anniversary, a petition was launched in 2009 in the hopes of having the Caesar named Canada's official mixed drink -  it is the perfect drink to celebrate Canada Day and it can be enjoyed with, or without alcohol! The Caesar was invented in 1969 by restaurant manager Walter Chell of the Calgary Inn. Chell said his inspiration came from Italy. He recalled that in Venice, they served Spaghetti alle vongole - spaghetti with tomato sauce and clams!  Basic preparation of a Caesar follows the "one, two, three, four" rule. Today is the first day of summer and from the weather reports I've seen, it has come in fast and furious!!                                                            Many of you down in the southern states are sweltering in your heat wave but so are we up north.  Yes, Canada gets hit with heat waves too but ours comes with humidity which simply drains you when the air you breathe is WET !! We've been under a heat advisory because, with the humidity our temps were reaching 37°C.In checking the temperature conversion page to see what that was in your money I thought it very funny that it equaled 98.6 Fahrenheit (°F)Wouldn't you think if the air temperature is the same temp as our bodies, that we'd not feel a difference?                                                                      ...

We're heading into our first long weekend of the Season and my mind is whirling with all the possibilities for picnics and lazy lunches on the deck.  The first is always the best in my mind so I always look for something new and different to throw in with the traditional favourites! There is something about this fresh Radish with Beet and Shrimp Salad that is just screaming at me!!! I love all Risotto!  Here is a perfect one for Easter dinner as it pairs well with ham, lamb or poultry!Carrot and Lemon Risotto Ingredients 6 cups chicken broth 1/4 cup unsalted butter 1 large shallot, diced small Coarse salt and ground pepper 1 cup Arborio rice 1/2 cup dry white wine 1/2 cup carrot juice (I press my own but bottled is fine) 2 tablespoons grated Parmesan 1 tablespoon grated lemon zest 1 tablespoon lemon juice Directions In a medium pot bring broth to a simmer; reduce heat and keep warm. In another pot, heat 2 tablespoons butter over medium-high. Add shallot, season with salt and pepper, and cook until beginning to soften, about 4 minutes. Add rice and cook, stirring 1 minute.
