Every few years, November 23 falls on a fourth Thursday of the month, which is Thanksgiving. Thanksgiving is probably the only American holiday to feature cranberries in any form, most commonly cranberry sauce. It makes sense that November 23 is Eat a Cranberry Day. For those not fond of cranberry sauce, there is always cranberry juice, cranberry muffins and even cranberry scones to sample instead. A plain cranberry is usually too tart a taste for most folks. Ingredients 1 turkey carcass   4 quarts water   1 (28 ounce) can whole peeled tomatoes, chopped   6 small potatoes, diced   4 large carrots, diced   1 large onion, diced   2 stalks celery, diced   1 ½ cups shredded cabbage   ½ cup uncooked barley   1 tablespoon Worcestershire sauce   1 ½ teaspoons salt   1 teaspoon dried parsley   1 teaspoon dried basil   1 large bay leaf   ¼ teaspoon freshly cracked black pepper   ¼ teaspoon ground paprika   ¼ teaspoon poultry seasoning   1 pinch dried thyme Directions Place turkey carcass into a large soup pot; pour in water and bring to a boil over medium heat. Yesterday was my FIRST DAY for a guitar lesson. And where would you expect this to have taken place? I never knew until a week ago there was from the program: LIVE WHOLE HEALTH with the veterans administration, and one thing I began yesterday was my first (at no cost) guitar lesson. It was interesting, educational, and FUN!The instructor said at one point IF you come back next week, I SAID NO YOU DON'T SAY IF TO ME, IT is WHEN  and I will be back next week. It has taken me some time to continually learn of the benefits of being a Navy veteran. As I understand it, this is the busiest travel day in the USA. Like Joe, Titus, & Philemon we (the Timm family) will be spending it at home... no travel required. Having recently made a trip from Minot ND to New Jersey I can relate to the old movie Trains, Planes, and Automobiles.My cross county trip utilized each form of transportation. Each one had it's pluses and minuses. If it were not for the TSA airplanes would win hands down. Because of the TSA I'd say Trains were my favorite but then again there is that time factor. On the automobile side a bus ride and a Uber were involved and they were both good as well. Wordless Wednesday…Stop and Breathe This is a busy week for most of us. We’re either preparing our annual Thanksgiving dinner or planning to travel for the holiday. We’ll have the usual crowd over on Thursday. I’m a list maker so the only way I know how to get a handle on everything is to make my list!  On our morning walk, I was focused on my list and everything I had to do. I walked past this lone beautiful red leaf on the path. Something made me stop, turn around, and take another look at it.  It was as if Mother Nature was telling me to stop…take a breath and enjoy what’s in front of you.  Enjoy the little things in life for one day you may look back and realize they were the big things. Robert Brault

Many of us over eat during the holidays but thankfully we are not getting "stuffed" to be a sacrifice or dinner for a another species. Yuck!If you are familiar with the Bible you know that there were religions that did require human sacrifice and they were all detestable to the Christian God. In doing a little research for this short post I did find indications that human sacrifice continues today but is very rare. A recipe from the kitchen of Debe Maxwell, CRS...   Healthy Recipe: Coleslaw Many people believe that cole slaw, just by the sheer fact that it contains an uber healthy green (cabbage), that the dish is also healthy. Well, it truly depends on the fat, sugar and carb content of the mayonaise you use! I've been using non-fat yogurt to make mayo and am trying various recipes, substituting yogurt, lemon juice (or lemon pepper), olive oil, vinegar and/or mustard as a substitute for the mayo. Gratitude Challenge…For My Life (Part 4) I am grateful for life. More to the point, I am grateful for my life.  My life gifted me with a simple All-American childhood with an Asian twist. It was full of piano lessons, tap, ballet and acrobats, and Girl Scouts.   On Sundays, we had a caravan of 5 or more cars that traveled 90 minutes to the family’s small beach property.  My grandmother set up a long table under a tent where she served up hot dogs, chili, and potato salad.  I sold Girl Scout cookies when they were Fifty cents a box.
