I put similar messages in all my listings. Although mine is after 6PM Saturdays. Typically it's workaholic agents with no boundaries that don't get this. Most respect it and agree with it...we all need a day off.

I've had highly qualified buyers decline seeing property listed like that - they think that the sellers are being greedy and they won't have anything to do with participating in games.
Then there are buyers who are in town to purchase - if they can't know by, say, midnight that night, whether or not they need to Offer on another property, they won't waste their time looking at it either.
And, lastly, there are those buyers who need an answer by ____ time - if the agent says they are not reviewing Offers until Monday and it's Saturday, it opens up a whole new can of worms (about presentation).
I've had the latter happen and the agent was holding Offers on her own volition, stating that the seller wasn't reviewing Offers until Monday (and it was Friday). I had to push to be sure that she presented the Offer with the deadline from the seller. As it happens, the seller had no idea the agent was holding Offers.

Ah, a spirited debate. I rather see this mentioned in the agent only remarks of the multiple listing service than not receive a response which is frustrating for agents and prospective buyers.
There are many different business models but communication and expectations should be a part of each. Unfortunately, that's not always the case.

This is a seller's decision, but often very realistic in a hot market where multiple offers may be written on a property. In this way, all parties know to get their offers in by Sunday evening and the seller will review all on Monday.

When I bought my house in Tennessee, I saw it on Zillow on a Saturday afternoon. My mother-in-law and the agent saw it that afternoon and we made an offer that evening. The agent submitted the offer and it was accepted on Saturday night around 10:30 PM. Had we waited until Monday, we wouldn't have gotten the house. As a mortgage broker, I've set my hours at Monday thru Sunday 8:00AM to 10:00 PM. No one is doing this here, but I need to be open for business when agents work and not have "banking hours" Keeping one step ahead of my competitors

Dependent on market place circumstances and client (seller) instructions and after reviewing the rules, regs and requirements within your jurisdiction, there are a number of ways reasons for this type of notice and how to go about handling this type situation.
For example if the sellers in the listing you are referring to are a corporate entity, or a POA or estate in the hands of lawyers, I can see a perfectly logical reason why that type of disclosure is perfectly appropriate.
On the flip side, If you are in an area with a very busy market place with the possibility of multiple offers, delaying offers may be a way to get a bit of a bidding war going.
There are a numbe of other options that may be applicable as well.
So it may be prudent to, investigate the reasons for the notice in the listing and proceed accordingly..
