I lot of builders had issues with Pex where we are at. Lots of lawsuits due to  improper installation that has caused leaks.

We used PEX when we built this house 18 years ago. No problems yet. We are well, so there is a little corrosion near the manifold, and some dicoloration inside of the pipes, but thta happened before we installed a water treatment system. Well water here has a lot of iron in it.

Al new homes around here have "pex". It is less expensive but more durable than standard copper.

Just had this installed in for my tankless water heater installation - it's definitely less expensive and supposedly is stronger and more durable and less likely to leak since they install it with no welds

I believe pricing is a deciding factor for many.  Copper is still most common in our area for pluming renovation of our older homes many of which still have galvanized from the beginning years of the last century.

Also, does not freeze like copper, or at least it doe not burst when frozen.

PEX has some FLEX. It is more resistant to freezing and can be navigated through awkward places.

The braze to connect copper pipes involves good tip, proper temperature and skills. When not soldered to perfection it can create leaks when the foundation shifts inside concrete slab.  Many contractors use thin walled Cu pipes to save $.  For the same reason 99% builders in the area gets sued before the 10 year warranty on plumbing leaks.   The retro Cu from Galvanied piping under existing crawl space is a bitch.  There are little room to work and I often wonder whether these retro jobs will stand over time.
